A full-bodied red Bordeaux—Saint-Émilion Grand Cru or Pauillac. The tannic structure of Cabernet Sauvignon and the roundness of Merlot stand up to the heat of the grill. The cedar and red bell pepper notes of Cabernet complement the smoky flavor of the churrasco. Serve at 17°C (63°F).
